The Pastry Chef and Business Manager provides overall leadership and management for BED’s Pastry and Bakery Training School. The primary purpose of the position is to ensure high-quality, relevant, inclusive vocational education and strong student outcomes in line with BED’s NGO mission. The role is accountable for the school’s planning, curriculum relevance, team coordination, student experience, operational management, quality assurance, and connection to labor-market opportunities.

The position works closely with the Pastry Technical Training Lead and the training team. The Pastry Technical Training Lead remains responsible for day-to-day technical instruction, assessments, and trainee follow-up, while the Pastry Chef and Business Manager ensures that the school functions as an integrated program with clear objectives, effective coordination, adequate resources, consistent standards, and continuous improvement.

The role also leads the training coffee shop, pastry production, and social-enterprise development so that these activities support student learning, real-world practice, employment readiness, and financial sustainability. The position directly manages the Senior Coffee Shop Officer, the Pastry Chef, and the pastry production team and is expected to provide hands-on pastry and bakery leadership when required.

3. REQUIREMENTS AND QUALIFICATIONS

Education: Diploma, degree, or recognized professional qualification in pastry/bakery, culinary arts, TVET, education or training management, hospitality, food and beverage management, business management, social enterprise, or a related field. A formal pastry or bakery qualification is strongly preferred; equivalent professional experience may be considered.

Experience: A minimum of 7–10 years of relevant experience in pastry and bakery, hospitality, TVET, education, or food and beverage operations, including substantial hands-on technical production experience and supervisory or management responsibility. Experience managing a training school, vocational program, NGO program, or social enterprise is strongly preferred.

Knowledge:

  • Strong understanding of vocational-school or training-program management, curriculum quality, learning outcomes, student support, quality assurance, labor-market alignment, internships, and employment pathways.
  • Strong understanding of bakery and pastry production, ingredient functionality, production planning, recipe standardization, product development, food costing, yields, stock control, packaging, storage, quality management, allergens, hygiene, and food safety.
  • Good understanding of coffee-shop operations, customer service, barista standards, POS and cash controls, promotions, events, front-of-house supervision, and social-enterprise management.
  • Understanding of safeguarding, gender equality, inclusion, professional ethics, and the responsibilities of working with disadvantaged youth in an NGO and TVET environment.
  • Ability to connect education, student development, production, customer service, and business operations without allowing commercial priorities to replace the school’s educational mission.

Required Technical Pastry and Bakery Competencies:

  • Demonstrated hands-on pastry and bakery production skills are required; this is an essential selection criterion, not only an advantage.
  • Ability to independently prepare, finish, and supervise a suitable range of pastry and bakery products while maintaining consistent quality, presentation, timing, and food-safety standards.
  • Ability to standardize recipes and production methods, calculate quantities and yields, control portions and wastage, and troubleshoot technical production or quality problems.
  • Ability to demonstrate techniques, coach staff and students, and assess whether products and work practices meet the required professional standard.

Skills:

  • Strong leadership and management skills, including school planning, team coordination, curriculum review, student-outcome monitoring, quality improvement, coaching, performance management, and decision-making.
  • Ability to prepare and monitor budgets, sales targets, forecasts, cost controls, purchasing needs, inventory, KPI reports, and business-improvement actions.
  • Strong planning, prioritization, problem-solving, conflict-resolution, customer-relations, partnership-building, communication, facilitation, and cross-team coordination skills.
  • Ability to analyze student, operational, market, customer, and financial information and translate findings into practical improvement actions. Good working English, especially listening, speaking, reading, and writing, is required.
  • Good computer skills, especially in Excel, Word, reporting tools, POS systems, and stock-management tools where applicable.
